Thai fried mussels recipe
(Crispy mussels pancake)
From a street food in Thailand through
the five stars resturant dish!!
This fried mussels recipe is a famous and typical Thai style
pancake which you would see it almost everywhere in Thailand.
Normally the shop that serves this dish would also serves
the stir fried rice noodle (Pad Thai) as well.
I love to cook this, it's easy,tasty and can really fill you up.
(Hoi Tod) Fried Mussels Recipe
- 10 cooked mussels
- 1 cup of corn flour
- 1 cup of soda water
- 1 table spoon of fish sauce or 2 table spoon of light soy sauce if prefer
- Some salt
- 2 tablespoons of vegetable oil
- 1 clove of chop garlic ( Optional )
- Ground white pepper
- 1 teaspoon of sugar
- 1 eggs
- 2 tablespoons of finely chopped spring onion
- A handful of mung bean sprouts)
Mix the corn flour and soda water well.
if the mixture is too light add more flour.
Add mussels and some salt in the mixture, mix well.
Heat up the oil in the pan fry add chop garlic,
slightly brown it and add the mixture into the pan.
Don't break the mixture, cook until the mixture is form.
Add 1 egg on top of the pancake then break the egg york.
Before turnover the mixture, make sure the base is nice and crispy.
Break the pancake into medium square pieces.
Add fish sauce (or soy sauce),sugar and sprinkle some white pepper on the mixture.
Then add mung beans and stir fry together with the pancake about 30 second.
Garnish with spring onion and serve with sweet chili sauce.
