the soft bones. They're crunchy and contain high value
of calcium. However it would be almost impossible
to chew if the soft bones are too big.
(don't break your teeth for them)
So when buying the ribs the relatively small soft
bones would be the one that you're looking for.

Ask your butcher and you would get the ribs
that suit your taste the most.
Honey Pork Spare Ribs Recipe
- 600g of pork spare ribs
(chopped into around 2 inches long)
- ¼ teaspoon of salt
- 2 tablespoons of sugar
- 3 tablespoons Hoi Sin sauce (seafood sauce) or honey
- 2 tablespoons of light soy sauce
- 2 teaspoons of corn flour
- ½ cup of chicken stock
- Oil for deep fry
Deep fry the pork spare ribs around 8-10 minutes
until the spare ribs are quite crispy. Drain and set aside.
Boil the stock in the wok or a large pan fry. Add salt,
sugar, Hoi Sin sauce and light soy sauce into the stock.
Mix corn flour with a little water and pour it into the stock
to thicken the mixture.
Place the ribs into the wok and mix them well with the sauce.
Place onto the dish. Serve hot.
